Vegetarian Chili Recipe with Chickpeas

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, diced
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1/2 cup vegetable broth
  • 1/4 cup chopped fresh cilantro

Instructions

1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the bell peppers and jalapeno and cook for another 5 minutes.

2. Add the chili powder, cumin, paprika, oregano, salt, and pepper and stir to combine. Cook for 1 minute.

3. Add the diced tomatoes, tomato sauce, chickpeas, black beans, and vegetable broth. Bring to a simmer and cook for 30 minutes, stirring occasionally.

4. Remove from the heat and stir in the cilantro. Serve hot.
